I am constantly striving to learn more about cooking with organic, whole foods. It makes logical sense – the less stuff we add to our foods, the better it is for us. Whole foods have more nutrition and less junk! I am not 100% there yet, but I am trying.
I used LAND O LAKES® Eggs. They are produced by hens fed a premium vegetarian whole grain diet consisting primarily of whole ground corn and soybean meal, with no added hormones, antibiotics, animal fats or animal by-products. If I am going to start eating healthier, I can start in small ways by making smarter choices in which eggs, meats and produce I purchase.
A few thoughts:
Lizzie was shocked that the eggs were brown! They sell organic, white eggs too, but I wanted to introduce her to brown eggs. The yolks are brighter yellow and the flavor of the casserole is fuller. It is a huge relief to me to know I am eating eggs and only eggs when I serve my family dinner. The cost is a smidge higher for organic eggs – $3/dozen vs. $1.
You can use organic spinach as well – I used frozen, chopped spinach to speed up prep time. Pairing with organic fruits makes for a light – yet filling – dinner!
I was given a coupon to try these eggs. They were yummy and that is my opinion.
